Chili Omelette Breakfast

Ingredients:

Tomato
Onion
Green
Chili Omelette
1 Whole Egg
3 Egg Whites
1 Roma Tomato, Seeded and Diced
1/4 Cup Sweet Yellow Onion. Chopped
2 tbsp green chilies, Diced (Titfani likes Ortega_brand)

Directions:

Heat a small nonstick skillet over medium-high heat.
Whisk the egg and egg whites together.
Lightly coat skillet with cooking spray and sauté onion, tomato and chillies until soft (about 2 minutes).
Add eggs to pan and let cook until bottom is lightly golden.
Flip eggs with a spatula and cook 30 to 60 seconds.
Golf in half and serve.
