300 grams Fresh Prawns
1/2 Cup Orange Juice
1 Cup Couscous
200 grams Green Beans
1 Tablespoon Fresh Parsley (Chopped)
20 grams Pistachios
1 teaspoon Moroccan Spice Mix
Combine 2 tablespoons orange juice and 1 tablespoon Moroccan spice mix into a bowl.
Add prawns and toss to coat.
Cover and refrigerate for 10+ minutes.
Place couscous into a heat proof bowl and add 1 cup boiling water.
Cover and set aside for 5 minutes or until water is absorbed, using fork to separate grains.
Add remaining orange juice, spice mix, pistachios and parsley and mix together.
Bring a saucepan of water to the boil, add beans and boil for 1 - 2 minutes or until tender.
Drain and add to couscous.
Remove prawns from marinade and place onto non stick fry pan and cook for approximately 2 minutes each side or until white through middle.
Place couscous on plate, add prawns over the top and serves
